When distilling, we take herbs / fruits / plants and heat them to a temperature at which alcohol evaporates and water does not. This way, the taste and aroma of the herbs are in the alcohol that has been distilled. This is always colorless and transparent.

By soaking ingredients in alcohol you obtain a macerate. It's like making a tea. Over time the alcohol will be colored.
